Vegan Zha Jiang Noodles

I love these vegan black bean noodles. Known as Zha Jiang Mian (炸醬麵) in China or Taiwan and even Korea. These are great for summer when the heat is too intense for soups. Traditionally, Zha Jiang Mian is made with pork. I love this vegan version made with tofu — you really don’t miss the meat here! I’ve made it for western friends and they all love the black bean sauce.

If you’re new to bean sauces, they come in spicy, sweet, and salty variations. It can be intimidating but also forgiving if you buy the wrong kind. Just adjust the seasoning to taste. The brands I used for this recipe is pictured below.

Vegan Black Bean Zha-Jiang Noodles (炸醬麵)

Serves 2-3

Ingredients

Sauce

  • 2 tablespoons salty bean paste (or Soybean Paste / Dou ban Jiang豆瓣醬)*

  • 6 tablespoons of sweet bean paste (Tian Mian Jiang 甜麵醬)

  • ½ cup Shaoxing wine, rice wine, or sherry

  • 1 tablespoon sugar

  • 1.5 cup (120 grams) chopped mushrooms (I use white button or king oyster mushrooms)

  • 1 package (285 grams) of firm tofu, patted dry and crumbled into pieces

Fragrant Oil *

  • ½ cup oil

  • 1 onion cut into 8 wedges

  • 1 green onion, chopped coarsely

Other Ingredients

  • Noodles of choice*

  • Shredded cucumber and carrot

  • Chopped cilantro or green onions (optional)

Instructions

  1. Place all the bean pastes in a large mixing bowl, add the Shaoxing wine, and mix until well combined. Set aside.

  2. Using a large non-stick pan, add ½ cup of oil, the chopped onion, and green onion. Cook over medium-low heat until the onions turn brown and crispy, around 8-10 minutes. Use a slotted spoon to discard or save the onions for other dishes.

  3. In the same pan, add the crumbled tofu and fry until golden brown. stirring continuously. Add in the mushrooms, and cook until softened and aromatic.

  4. Stir in the bean sauce and turn the heat to low. Stirring constantly until the sauce evaporates into a chunky mixture. Adjust with sugar or salt to taste.

  5. Cook noodles as directed and set aside.

  6. To serve, spoon sauce over noodles and top with shredded cucumber, carrot, green onions, or cilantro (optional). Serve warm.

Cooking notes:

• The black bean paste is very salty! Go easy on it if it’s your first time cooking with it.

• Substitute the fragrant oil with different flavored oils like shallot oil.

• I like to double the portions for leftovers. The sauce is very good served with summer vegetables over a salad.

Taiwanese Sesame Noodles (Ma Jiang Mian)

This Taiwanese cold sesame noodle recipe is a classic with a capital C. You can find them anywhere from local wet markets (菜市場) to traditional beef noodle shops and modern restaurants. The base will always be the same — rich, garlic saucy sesame served over chewy noodles and chilled julienned vegetables. I find myself craving this when the weather starts to warm up. Also, when I have an abundance of salad vegetables lying around. 

A studio-worthy meal

Taiwanese Cold Sesame Noodles 

Serves 4-5, recipe adapted from CarolEasyLife

Ingredient

Sesame sauce

  • 4 tbsp Chinese sesame paste*

  • 4 tbsp hot water

  • 2 tsp soy sauce 

  • 4 cloves garlic, finely minced

  • 2 tsp black vinegar (sub rice or apple cider vinegar)

  • 1.5 tbsp sugar 

Toppings & Noodles 

  • 1/2 carrot, peeled

  • 1 cucumber

  • 3 eggs

  • 1 package of bean sprouts

  • 1 package egg noodles (or noodle of choice)

Instructions 

Sesame Sauce

  1. Using a heat proof jar or container, add the sesame paste and hot water. Stir or shake vigorously to combine. 

  2. Add the remaining ingredients and mix thoroughly. Adjust the seasonings if necessary. 

Toppings & Noodles 

  1. In a medium bowl, beat the eggs and add a pinch of salt. 

  2. Over a medium-sized pan, add oil and fry the eggs into a thin crepe. Let cool and slice into thin shreds.

  3. Wash the bean sprouts and boil for 10 seconds. Drain the water and set it aside to cool.

  4. Julienne the cucumber and carrot into thin matchsticks.

  5. Cook the noodles according to package instructions. Add sesame oil or rinse with cold water to prevent them from sticking.

  6. To assemble — arrange the noodles at the bottom and add the toppings and sauce. Serve immediately.

Cooking notes:

  • The toppings are super flexible, use any salad vegetable you have. Traditionally, this dish is served with shredded chicken.

  • You can prep the sauce and toppings ahead and store in containers before serving

  • Chinese sesame paste is made from toasted white sesame seeds, not to be confused with tahini.

  • If you don’t have Chinese sesame paste, substitute peanut butter or any nut butter though it will affect the taste.

Stir-fried Tomato and Egg / 番茄炒蛋

Amongst all my memories of delicious childhood dishes — this is by far my favorite + most classic of all. Everything Chinese family has a version. My dad makes it, my grandma makes it, all the lunch bento spots we ate at as students make it. It’s ridiculously comforting and easy to make with minimal ingredients. The sweet-sour tang of tomatoes makes the dish so full of umami flavor and brings depth to a simple egg dish. A classic away-from-home dish to make during my years as a college student and while living abroad.

Ripe juicy tomatoes, a handful of eggs, green onions and cornstarch is all you need. Let’s get cooking

Note: If I am making this dish for one— I halve the recipe.

Tomato Fried Egg

Serves 2–3, recipe adapted from Adam Liaw

Ingredients
3 ripe medium-sized tomatoes, roughly chopped
1/2 cup water
2 tbsp vegetable oil
½ tsp salt
¼ tsp sugar
2 spring onions, cut into 5cm lengths
½ tsp cornstarch, mixed with a little cold water
5 eggs, beaten

Instructions

  1. Heat a medium pan over medium-high heat and add a tablespoon of oil. When the oil is hot, add the tomatoes and fry until they are soft around 2 minutes.

  2. Add the salt, sugar, 1/2 cup water, and green onions. When the green onions soften, slowly add the cornstarch mixture, stirring as you go. The tomato mixture will thicken into a saucy slurry. Taste and add more salt or sugar as desired. Remove the tomato mixture from the pan and rinse the pan.

  3. Return the pan to heat and add the remaining tablespoon of oil. Add the beaten eggs and stir every 15 seconds until the eggs resemble the texture of a loose omelet. Add the tomato mixture to the eggs and stir to combine. Taste and adjust seasoning, garnish with more green onions if desired. Serve immediately.

Three Cup (Sanbei) Tofu

A plant-based dish with intensely good flavors.

If you have ever been to Asia — you’ll know what I am talking about when you eat at those hole-in-the-wall street restaurants. A gathering place where all levels of society come together and order enough food to cover several tables. You don’t go there for fine dining but for the clatter of smoky woks, clinks of Taiwanese beer bottles (guava juice for the kids), scooters lined out the door, and the non-stop motion of the city.

Traditionally, this dish is made with chicken that I’ve adapted with tofu for plant-based cooking. The name three-cup refers to the equal ratio of rice wine, soy sauce, and sesame oil. The ingredients have evolved and been adapted over time to suit different regions in Taiwan and China. 

This is a dish that is healthy enough to be a household staple, though it doesn’t guarantee any leftovers based on experience. The generous amounts of ginger, garlic, basil, and sesame oil create flavors that are intense and captivating to the taste buds.

If you are new to Taiwanese cooking wine/Mijiu 米酒 — I recommend you pick up a bottle at your local Asian grocery (I get mine from T & T in Vancouver). There are substitutes you can use like Chinese rice wine, sake, dry sherry, or plain vegetable stock but you’ll get the best results from Taiwanese cooking wine. It’s what I grew up with.

Three Cup Tofu

Serves 2,

Ingredients

  • 14 oz (1 package) medium-firm tofu, drained and patted dry

  • 3-inch knob of ginger, sliced into thin pieces*

  • 5 cloves garlic, sliced

  • 1 Thai red chili, chopped into pieces

  • 1 packed cup of fresh Thai basil, roughly chopped

  • 1/3 cup cornstarch

  • oil for cooking

Sauce

  • 3 tbsp Taiwanese cooking wine 米酒 (sub rice wine/sake/vegetable broth if you must)*

  • 3 tbsp soy sauce⁣ or Tamari

  • 3 tbsp sesame oil⁣

  • 1 tbsp sugar⁣

  • ⅓ cup [80g] water⁣

Instructions

1. Dry the tofu with paper towels (I let mine drain on a paper towel while I prep). Slice the tofu in half lengthwise and cut each half into 1cm-thick slices or cubes.

2. Place the cornstarch in a large bowl and coat the tofu slices one by one, on all sides. Add more cornstarch if needed. Lay the coated tofu slices on a large plate for frying, making sure not to overcrowd them.

3. Heat a large frying pan over medium-high heat and add 2 tablespoons of oil. When the oil is hot, fry the tofu until golden and crispy, flipping every 3–5 minutes. This will take around 10 minutes. If the tofu cooks too quickly, lower the heat to medium.

4. While the tofu is frying. Add all the sauce ingredients into a bowl. Stir to dissolve the sugar.

5. Remove tofu from the pan and set it aside in a bowl. In the same pan over medium-high heat, add 2 tablespoons of oil and fry the ginger pieces until brown and golden, around 1 minute. Add the garlic and chili until they are crispy and become incredibly fragrant. Making sure the aromatics do not burn.

6. Pour in the sauce and stir until the sugar has completely dissolved. Add the tofu slices and toss to combine. Lower the heat to medium, add the Thai basil and cook until the sauce has reduced to a syrupy state. Turn off the heat and serve warm with rice. 

Cooking Notes:

Ginger: Make sure to fry the pieces until golden brown on all sides. Ginger, unlike garlic — lasts a lot longer in hot oil. Make sure to separate their cooking processes.

Sweet Potato Congee

I hope it’s been a good June for everyone. It’s been particularly cold in Vancouver so I have been firing up the stove for a lot of congee. For those who are new to congee — congee is the Asian version of chicken soup, for the soul, and so much more. A warm and nourishing meal known to boost your chi — congee is the remedy food for colds, flu, stomach aches, and bad days. It’s also a popular breakfast food for all ages and served in multiple flavors at congee noodle restaurants in Vancouver. 

This sweet potato congee is sentiment to Taiwan — the beautiful island I call home. Geographically shaped like a sweet potato — the Taiwanese take pride in what we call a “sweet potato spirit / 番薯精神”. A spirit determined to take root and bear fruit wherever we are planted, even in the harshest environments. A life force that propelled the island to prosperity in the early farming days.

In Taiwanese, one of the few words I know is “Muai” which means congee — a breakfast item I would request every time I visited grandma in South Taiwan. Cooked from leftover rice and served with a humble fried egg, soy sauce, and pickled vegetables — it was a breakfast to wake up to.

In Taiwan, there are plenty of restaurants that serve plain congee with a wide selection of dishes known as “清粥小菜” meaning “light congee, little dishes”. To make a congee spread — top with anything you like to eat. The possibilities are endless. 

Ideas for congee toppings:

  • Fried eggs, or eggs any way

  • Stir-fried vegetables

  • Spicy cucumber fans

  • Stir-fry lotus root

  • Furikake

  • Pork floss

  • Braised tofu and vegetables in soy sauce

  • Pickled cucumbers(I like 金蘭 Kamlan brand from T&T)

Sweet Potato Congee Recipe

Serves 2 to 3 people

Ingredients

  • 1 cup rice (short grain rice or jasmine rice for extra flavor)

  • 10 cups water

  • 1 medium-sized sweet potato, peeled and chopped into 1-inch pieces. 

Instructions

Rinse 1 cup of rice until the water runs clear. Soak for 1-hour or overnight. Drain and set aside. Peel and chop 1 medium sweet potato into 1-inch pieces. Set aside.

  1. Bring 10 cups of water to a boil, add the rice, cook and bring to a boil again. Adjust the heat to simmer and cook for 45 mins to 1-hour. Stirring the bottom of the pot constantly. Cook until the rice is mushy, softened, but still retains its shape.

  2. Add the sweet potato and bring it to a boil for 5 mins. Cover the pot with a lid, turn off the heat and let sit for 20 minutes. The heat from the rice will cook the sweet potato while keeping its shape, we don’t want it to get mushy here.

  3. Serve and enjoy the congee while it’s hot. This sweet potato congee keeps in the fridge for 2–3 days.

Smashed Cucumber Salad

In Taiwan, one cannot eat at a restaurant without ordering 小菜 “Little Plate” or side dishes. Usually consisting of vegetables, marinated firm tofu, soft boiled peanuts, or black wood ear mushrooms. Little Plate is a part of Taiwanese restaurant culture and something I look forward to every time I eat out. It is also a good way to get your veggie fix as Taiwanese cuisine can be heavy and salads are not really a thing.

This cucumber salad is a 涼拌, which translates into “Cold Toss”. Similar in cooking style compared to a green papaya salad — I would say it is a signature “little plate” in Taiwan. I enjoy making this as an appetizer when friends come over. It’s refreshing yet flavourful. The peanuts make it indulgent, the birds-eye chilli gives it a good kick, and one can not eat too many cucumber dishes in summer weather.

Smashed Cucumber Salad 涼拌小黃瓜

Ingredients

5 mini Japanese or Persian cucumbers (around 350 grams)

2 Tbsp Kosher salt

4 red or green Thai chiles, halved lengthwise keeping stem end intact

2 garlic cloves, minced

½ cup unseasoned rice vinegar

2 Tbsp fish sauce

1 Tbsp sugar

Chopped unsalted or salted roasted peanuts

Instructions

Smash cucumbers with a rolling pin or a wine bottle. Careful not to smash too close to the cutting board now, you want some crunch in them. Tear into 2-inch pieces, place in a medium bowl and season with salt. Let sit for 30 minutes.

In the meantime, add chillies, garlic, vinegar, fish sauce and sugar to a medium bowl. Whisk until the sugar dissolves.

Drain cucumbers, rinse with cold water and squeeze to release salty water. Add to bowl with dressing and toss to combine. Chill in the fridge for an hour and serve topped with peanuts.

These cucumbers will keep in the fridge for 2 or 3 days.


Nori Peanut Rice Crisps

In Taiwan, “popcorn trucks” 爆米香 are a thing. You can find them driving through neighbourhoods, parking to sell rice puff squares while blaring “Bao Mi (Popcorn), Bao Mi.” If you stop long enough, you will hear a giant bang followed by a puff of smoke and the aroma of roasted peanuts, job tears and rice. It’s a memory everyone has growing up in Asia. Some versions include sesame seeds and it’s relatively similar to peanut candy, a popular snack among the old folks. I am known to devour these by the bag.

I was re-introduced to puffed rice making granola Glo bars from OhSheGlows before realizing, heck, I need to make my own version of these. I’ve replaced the maltose (麥芽糖) with brown rice syrup, which is terrifically sticky and holds around 2/3 of sweetness compared to honey. I also substituted butter with almond butter, though peanut butter will do just as well. A healthy-westernized version of Bao Mi that is marvelously crunchy. I have a square or two for breakfast and it keeps me surprisingly full. You can add your own flair to these with roasted nuts, chia seeds and completely veer off the path of tradition.

Nori Peanut Rice Crisps 海苔花生爆米香

Ingredients

1/2 cup brown rice syrup (sub honey but it will taste a lot sweeter)
1/2 cup creamy almond butter (sub peanut butter)
3 1/2 cups puffed rice crisps
1 pack toasted nori sheets (17 grams), torn and crumbled into pieces
1/2 cup roasted peanuts (sub any kind of roasted nuts)
I tbsp sesame seeds or chia seeds

Instructions

Line a 9x13 inch baking pan with parchment paper, and aim for one with depth as it yields thicker squares. In a large bowl, combine the dry ingredients — puffed rice, nori, peanuts, sea salt and sesame seeds. Set aside. In a large soup pot, add the brown rice syrup and almond butter and cook on medium-low heat until it bubbles. Keep an eye on it and don’t let it caramelize or harden. Remove pot from the heat source and add in the dry ingredients, stirring furiously to encourage even distribution. The mixture will be very sticky.

Transfer contents from the pot to the baking tray. Scrape the sides with a spatula. Spread it evenly and press down with a spatula or wooden spoon. Set aside until cool and slice into squares or bars with a bread knife. Store cooled in an airtight container. It keeps well at room temperature for a week.
